Preparation
Cut the baby potatoes into small pieces. Roughly chop the peppers. Cut into 1/2 cm slices the courgettes. Cut into thick slices the red onions. Cut the lemons into wedges.

- 1 Preheat the oven to 200°C/ 180°C fan/ gas mark 6.
- 2 Add all the veg and chopped tomatoes to a roasting tin, season with salt and pepper, and then scatter over half the Cook With M&S Cajun seasoning. Drizzle with olive oil and toss so everything is evenly coated. Place in the oven for 30 minutes.
- 3 Remove the roasting tin from the oven, stir and then place the salmon fillets on top of the veg. Sprinkle a pinch of Cajun seasoning over each fillet. Bake for another 12-15 minutes, until the salmon is cooked.
- 4 Serve with a good squeeze of lemon, if you like.

Very tasty and dead easy to prepare. I wouldn’t recommend to someone who isn’t keen on spice though.
