Sticky hoisin chicken and tender greens

A proper midweek winner. This all comes together quickly, but you don't have to compromise on big, bold flavours thanks to aromatic ginger and garlic, and sweet-and-sour hoisin sauce. - Chris Baber

Cut into 1cm strips the M&S Select Farms skinless and boneless chicken thighs. Slice the onions. Halve the green beans. Cut the limes into wedges.

  1. 1 Cook the rice according to packet instructions. Meanwhile, heat a large non-stick frying pan over a high heat, add the chicken strips and fry for 5-8 minutes, until just golden.
  2. 2 Add the chopped chilli, ginger and garlic and the slice onion, then fry for 2-3 minutes until the onion softens and takes on some colour.
  3. 3 Add the soy sauce, stirring to coat the chicken, then add the beans along with 100ml water.
  4. 4 Cover with a lid and cook for 5 minutes until the beans are just cooked, stirring occasionally.
  5. 5 Remove the lid, then add the hoisin sauce and toss together to coat all of the ingredients. Cook for 1 more minute, then you're ready to serve.
  6. 6 Serve with fluffy wholegrain rice, a squeeze of lime and prawn crackers.
