Preparation
Dice the red peppers. Dice the yellow peppers. Slice the red onions. Finely chop the garlic cloves. Separate the leaves and stalks of the fresh thyme and discard of the stalks. Drain, saving 1/4 of liquid the tinned butterbeans. Chopped into 1cm cubes the sweet potatoes. Chop the fresh parsley.
And the rest...
- 1 Heat a splash of vegetable oil in a large frying pan over a medium heat and sear the sausages, turning occasionally, for about 6 minutes, until golden brown. Remove from the pan and set aside.
- 2 In the same pan, cook the peppers, onions, garlic and thyme for 5 minutes, until soft and starting to colour. Add the Cook With M&S smoked tomato paste, stir and cook for a further minute.
- 3 Add the butterbeans and liquid, sweet potatoes and stock, season then return the sausages to the pan. Cover and cook for 25 minutes.

Tasty but cooking times may need adjusted. Sweet potato was not cooked after 25 mins, needed at least 35. Also there is too much liquid, I took the lid off, turned up the heat and further reduced the liquid content, it was too watery before hand. Other wise a tasty one pot dish, ideal for the autumn.

Super midweek supper. Had to make my own smoked tomato purée as a last minute recipe required, and it was absolutely delicious! Found the amount of liquid ok, it thickened up nicely. Served with crusty sourdough bread. Would make again for sure

Fabulously easy sausage casserole and well worth buying the M&S smokey tomato paste. Definitely requires less liquid and I don’t add in the water from the butter beans. Needs about 10 minutes longer cooking time than the recipe. New family favourite.

Been making and enjoying this delicious dish since it first appeared....HOWEVER have recently been unable to find the smoky tomato paste in any local store. Has it been discontinued? If so, the recipe should be removed from app.
