Pork pan-fried in chili and ginger sauce with sweet potato mash

Slice the garlic cloves. Juice the limes. Deseed and slice the red chillis. Peel and cut the sweet potatoes into chunks. Peel and shred the root ginger.

  1. 1 Cook the potatoes in a large pan of boiling salted water for 15-20 minutes until tender. Move on to the next step while you wait.
  2. 2 Meanwhile, heat half the vegetable oil in a frying pan and add the ginger, garlic and chilli. Fry for 5 minutes, then remove and set aside.
  3. 3 Dust the pork with flour and season. Heat the remaining vegetable oil in the pan and quickly sauteĢ the pork.
  4. 4 Add the soy sauce, sherry, lime juice and sugar. Bring to the boil and cook for 5 minutes, stirring and scraping the bottom of the pan.
  5. 5 Return the ginger mix to the pan and stir through the coriander.
  6. 6 Drain the potatoes, season and add the olive oil. Mash until smooth and serve with the pork.
