Pepper and Parma ham chicken wraps

Tear the Mozzarella di Bufala Campagna into pieces.


  1. 1 Slit the chicken breasts in half lengthways and open out.
  2. 2 Spread each with 1 heaped tsp of Roasted Pepper pesto, top with the tomatoes and torn pieces of Mozzarella.
  3. 3 Fold the chicken back over and wrap each breast tightly with a slice of Parma ham.
  4. 4 Roast in a preheated oven at 200˚C/400˚F/gas 6 (180˚C for fan ovens) for 20-25 minutes.
  5. 5 Serve with roasted veg.
