Beat the eggs. Halve the passion fruits. Soften the unsalted butter.
- 1 Using a small spoon, scoop out the pulp from the passion fruit halves into a bowl.
- 2 In a separate bowl, beat together the eggs, egg yolks and caster sugar, then stir in half the passion fruit pulp.
- 3 Melt the butter in a large, heavy-based pan and pour in the egg mixture. Whisk over a medium heat until the mixture has thickened – this will take about 5 minutes.
- 4 Remove from the heat and stir in the remaining passion fruit pulp. Use to fill the tartlets and serve.
