Passion fruit curd tartlets

Enjoy passion fruit on its own, with yogurt or ice cream, or make this delicious curd, which will keep in the fridge for up to one week.

Beat the eggs. Halve the passion fruits. Soften the unsalted butter.


  1. 1 Using a small spoon, scoop out the pulp from the passion fruit halves into a bowl.
  2. 2 In a separate bowl, beat together the eggs, egg yolks and caster sugar, then stir in half the passion fruit pulp.
  3. 3 Melt the butter in a large, heavy-based pan and pour in the egg mixture. Whisk over a medium heat until the mixture has thickened – this will take about 5 minutes.
  4. 4 Remove from the heat and stir in the remaining passion fruit pulp. Use to fill the tartlets and serve.
