Mini cranberry, pistachio & orange drizzle loaf cakes

Lovely little frosted festive bakes– these loaves are perfect for morning brunch

Soften the unsalted butter. Chop the pistachio nuts. Zest and juice the oranges.


  1. 1 Preheat the oven to 180’C (fan 160’C) Gas 4. Place 10 M&S mini loaf cases on a baking sheet.
  2. 2 Cream the butter, sugar and orange zest in a large bowl until light and fluffy. Beat in the eggs, one at a time, then fold in the flour and baking powder.
  3. 3 Fold in two-thirds of the cranberries and nuts. Divide the mix between the cases, top with the remaining cranberries and nuts. Bake for 25-30 minutes or until a skewer inserted comes out clean.
  4. 4 Pierce the loaves a few more times with the skewer. Mix together the orange juice with the sugar then drizzle over the warm loaves. Leave to cool before serving.
