Mediterranean chicken tray bake

Dice the chorizo.

  1. 1 Preheat the oven to 200°C/180°C fan/gas mark 6.
  2. 2 Spoon the Cook with M&S Mediterranean paste into a roasting tray, then empty the Cook with M&S Chunk Mediterranean style veg mix on top. Add the diced chorizo and pour over the red wine.
  3. 3 Place the chicken thighs on top of the veg, drizzle with olive oil and season with salt and pepper. Place in the preheated oven and roast for 45 minutes, or until the chicken easily pulls from the bone and the juices run clear.
  4. 4 Scatter with chopped parsley and serve.

    Delicious and super easy dinner, the only change I would make next time is to use skinless and boneless thighs to make it easier to eat.

    Very easy, cheap and tasty dinner. Didn’t have any red wine and used garlic infused olive oil but was still very delicious. Left over for lunch tomorrow. Will definitely cook again and use the wine. My new go to recipe for when I have dinner guests. 100% Recommend.
