Peel and cut the potatoes in half, or into quarters if large.
- 1 Boil the potatoes in salted water for 5 minutes and drain well.
- 2 Heat the oven to 180°C/350°F/gas 4 (160°C for fan ovens).
- 3 Transfer the potatoes to a roasting tin, drizzle with the oil and sprinkle with the seasoning.
- 4 Roast the potatoes for 40 minutes, turning occasionally, until tender and crisp.

I love the simplicity of the recipe, but I leave out the salt in boiling the potatoes and boil them a minute longer.
