Stone, peel and slice the ripe mangoes. Thinly slice the radishes. Deseed and dice the cucumber. Shred the cooked turkey. Roughly chop the salted peanuts. Deseed and finely chop the red chillis.


  1. 1 Gently mix the mango, radishes, pineapple, cucumber, turkey and spinach in a large serving bowl.
  2. 2 Whisk together the dressing ingredients, season with salt and pepper and drizzle over the salad.
  3. 3 Scatter over the peanuts and serve.
