Crumble the feta cheese. Halve the cherry tomatoes. Juice the lemons. Include the stalks of the coriander. Include the stalks of the parsley. Cut into halves or thirds the Tenderstem® broccoli. Use red quinoa, freekeh and spelt in place of the M&S Super Grain Mix.
- 1 Cook super grain mix according to pack instructions. Drain well and cool.
- 2 Bring a pot of salted water to the boil, add the tenderstem broccoli and boil for 2-3 mins, or until fork tender. Drain well and set aside to cool.
- 3 For the dressing, place the olive oil, lemon juice, parsley, coriander and mint in a food processor and blitz until almost smooth.
- 4 In a large bowl, combine the broccoli, tomatoes, super grain mix, feta, raisins (if including) and herb dressing. Add chilli flakes, cumin, and salt to season, and mix well. Serve and enjoy.
This was so quick and simple. We were starving so actually ate full recipe between 2 which defeats object of choosing healthy tea...however I would quite happily make this again reducing volume of oil and swapping grain for cauliflower (or half and half) so I can still have a massive portion!
