Trim and cut the celery sticks.
- 1 Turn each celery ‘raft’ upside down, so that the rounded side is uppermost. Cut off a horizontal sliver, to make a flat surface, enabling the celery stick to sit flat without rocking.
- 2 Use a small knife or teaspoon to fill the celery sticks with the cream cheese of your choice and set aside.
- 3 Cut the smoked salmon ribbons into squares, about 5cm x 5cm, and stick a cocktail stick through each, ready to hold it above its celery raft as a square sail. Stick the free end of each cocktail stick firmly into the cream cheese side of each celery length.
- 4 Lay the cucumber slices out on a platter or board as an overlapping ‘sea’ with no gaps. Set the rafts to sail across the sea and do battle with each other as they go.
