Finely slice the spring onions. Finely chop the red chillis. Finely slice the radish. Zest and juice the oranges.

- 1 Arrange the salmon on a platter and scatter over the radishes, spring onion and chilli.
- 2 Mix together all of the dressing ingredients with a generous grind of black pepper.
- 3 Drizzle the dressing over the fish 5 minutes before serving.
