Purple-sprouting chilli pasta

The heads, stems and leaves of tender purple sprouting broccoli take centre stage in this vibrant dish.

Preparation

Deseed and finely chop the red chillis. Crush the garlic cloves. Thinly slice the stems of the purple sprouting broccoli. Tear the fresh basil.

  1. 1 Cook the spaghetti in boiling water for 10-12 minutes until al dente. Move on to the next step while you wait.
  2. 2 Cook the broccoli in boiling salted water for 4-5 minutes until tender. Move on to the next step while you wait.
  3. 3 Meanwhile, put the olive oil in a pan with the garlic and chilli and heat gently for 5 minutes.
  4. 4 Drain the pasta and broccoli, then return them both to one pan.
  5. 5 Stir through the garlic and chilli oil and the basil, then season with freshly ground black pepper.
  6. 6 Divide among serving plates and top with Parmesan shavings.
