Pork noodle salad

Preparation

Finely chop the garlic cloves. Shred the spring onions. Evenly slice the pork fillet. Finely chop the fresh coriander. Crush the salted peanuts. Finely chop the red chillis. Juice the limes.

  1. 1 Put the pork in a bowl with the oil, garlic and the salad honey. Cook the noodles according to pack instructions, drain and rinse under cold water, then put in a bowl with the coriander.
  2. 2 Mix together the red chilli, dressing honey, soy sauce and lime juice, then pour over the noodles, stirring to combine.
  3. 3 Heat a griddle pan and cook the pork slices for 2-3 minutes each side until the juices run clear.
  4. 4 Divide the noodles equally between each serving, top with the pork slices and scatter over the peanuts and spring onion to serve.
