PINK FRUIT SALAD

This crunchy and fresh bright pink salad looks great in the middle of the table. Get your kids to help you prepare it: all the fruit is soft and they can practise their knife skills. For a treat, serve it with a scoop of vanilla ice cream or frozen yogurt.

Preparation

Hull the strawberries.

Method

  1. 1 Chop the green skin off the watermelon and discard. Using a star-shaped cookie cutter cut the pink flesh into nice mixed-size stars, or using a knife cut into bite-size pieces and add to a large serving bowl.
  2. 2 Toss through the raspberries, slice the strawberries or cut into heart shapes, scoop the flesh out of the passion fruit and add the juice and zest of a lime. Sprinkle over the pomegranate jewels.
