Halve, pit and peel the Peruvian Hass avocado. Cut the Parma ham in half lengthways.
- 1 Cut each avocado half into 3 equal pieces.
- 2 Wrapping one at a time, lay a slice of avocado onto a small bunch of rocket, then wrap in a piece of Parma ham.
- 3 Try to lay the rocket leaves in the same direction to make wrapping easier.
- 4 Secure with cocktail sticks, if wished.
- 5 Serve, sprinkled with a little black pepper.
