Parma-wrapped Avocado with Rocket

Preparation

Halve, pit and peel the Peruvian Hass avocado. Cut the Parma ham in half lengthways.

Method

  1. 1 Cut each avocado half into 3 equal pieces.
  2. 2 Wrapping one at a time, lay a slice of avocado onto a small bunch of rocket, then wrap in a piece of Parma ham.
  3. 3 Try to lay the rocket leaves in the same direction to make wrapping easier.
  4. 4 Secure with cocktail sticks, if wished.
  5. 5 Serve, sprinkled with a little black pepper.
