Soften the unsalted butter. Chop the pistachio nuts. Zest and juice the oranges.
- 1 Preheat the oven to 180’C (fan 160’C) Gas 4. Place 10 M&S mini loaf cases on a baking sheet.
- 2 Cream the butter, sugar and orange zest in a large bowl until light and fluffy. Beat in the eggs, one at a time, then fold in the flour and baking powder.
- 3 Fold in two-thirds of the cranberries and nuts. Divide the mix between the cases, top with the remaining cranberries and nuts. Bake for 25-30 minutes or until a skewer inserted comes out clean.
- 4 Pierce the loaves a few more times with the skewer. Mix together the orange juice with the sugar then drizzle over the warm loaves. Leave to cool before serving.
Delicious! Unable to find loaf cases, so used muffin cases instead. Will put pistachios through food processor next time - too time consuming chopping them by hand.
