Slice the tomatoes. Slice the mozzarella balls. Halve the limes. Chop the basil.


  1. 1 Heat the oil in a large frying pan, add the spinach and cook, stirring, until wilted. Squeeze out any liquid.
  2. 2 Preheat the grill. On the hob, heat a large frying pan. Add a flatbread and sprinkle with a little water. When heated and crisp, turn over the flatbread and top with a quarter of the spinach and a sliced tomato. Season, then dot with a quarter of the mozzarella.
  3. 3 Place under the grill for 3-4 minutes. Remove and top with 1 tbsp guacamole, herbs and rocket.
  4. 4 Keep warm while repeating with the remaining flatbreads and ingredients. Serve each with a lime half.
