Finely chop the onions. Chop the tomatoes. Finely chop the celery. Shred the roast chicken. Grate the Cheddar cheese.
- 1 Gently cook the onion and celery in the oil for 10 minutes.
- 2 Add the fajita seasoning and chipotle ketchup and cook for a further 2 minutes.
- 3 Add the tomatoes and stock and simmer for 10 minutes.
- 4 Stir through the chicken and cook for 5 minutes.
- 5 Serve garnished with the tortilla chips, cheese and coriander.
