Mackerel, beetroot and slaw pitta sandwich

Preparation

Halve the wholemeal pitta breads. Peel the skin and flake the boneless smoked mackerel fillets. Chop the cooked beetroot in natural juice. Juice the lemons. Finely shred the sweet heart cabbages. Finely slice the red onions. Very finely sliced the carrots. Toast the sesame seed.

  1. 1 Mix together the carrots, cabbage, sesame seeds, onion, lemon juice and mayonnaise and season,
  2. 2 Put the mackerel into the bowl with the slaw, add the beetroot and mix well.
  3. 3 Warm the pitta breads and stuff with the mackerel filling.
