Dice the aubergines into 2cm cubes. Finely chop the red onions. Crush the garlic cloves. Drain and rinse the tinned cannellini beans.
- 1 Spray a non-stick frying pan with a little oil and sit over a high heat. Fry the aubergine for 4-5 minutes, stirring, until golden and slightly softened.
- 2 Stir in the onion, garlic, tomatoes, beans and half the pesto; season and simmer for 8-10 minutes.
- 3 Make indents into the mixture and crack an egg into each one. Cover and cook for about 5 minutes, or until the eggs are set to your liking.
- 4 Drizzle over the remaining pesto and scatter with the Parmesan and basil.

Made this for a filling brunch and it was really delicious. We served it onto of the San Fransisco bread which was a really nice addition.

Great recipe. Quick, healthy and very tasty. Easy to change the ingredients to suit, or add variety e.g I added diced polish smoked sausage once and it was great. The basic recipe is now a firm favourite, thank you M&S .

Really enjoyed making and eating this. I used courgette as a substitute for the aubergine and it worked well, quite healthy if you the pesto and Parmesan to a minimum, no complaints.

It was ok, had it with sausages, nice to try something different. It lacked something I couldn't pick my finger on. The recipe states for two but the portions were massive so if I were to do this again I'd reduce the recipe. A little bland just to have a big bowl alone.

I used good quality timed tomatoes, decent pesto and added capers, swapped to white kidney beans and cooked the aubergine a lot longer and we loved this dish, lovely flavours working together. Though huge portions for 2 persons!
Just had this dish for dinner & I thoroughly enjoyed it! Ingredients were well balanced and matching perfectly for great taste (I used just half the beans). I also added a bit of salt, more extra virgin olive oil, a dash of Italian mix herbs (as that suited my taste and elevated the dish more). I do agree that it's plenty for 2 people esp. if you have a starter/salad. P.S. Suspect it would go really well with some toasted bread for mopping up if you leave some more juices and runny yolk.

We had this between two people for a brunch meal. Couldn't fault it, tastes delicious and is very filling. I did add some sausages to it and had some crusty bread to mop up the juices and dip in the egg. Simple recipe but 5* quality

One of our favourites! Pancetta works really well in this recipe if you prefer a bit of meat. Easy to cook and enough for three.
Needed much spicing up, not to my taste, would have been better without the eggs.
Lovely dish however added salt, pepper, oregano and chilli to spice and flavour this dish up! Had this for brunch...think this would also be good for dinner with garlic bread! Given this 4* as had to add my own spices in for extra flavour.
Very tasty - I left the aubergine out and saved half the mixture to split over two days' breakfasts. The mixture was drying out before the eggs finished cooking so I had to flip them. I think tomorrow I'll just poach my eggs and reheat the mixture in the microwave to save on time and mess. I still felt there was something missing - next time I might cook it with a bit of pancetta or garlicky Italian sausage, or perhaps just serve with toasted, garlic-rubbed ciabatta.
Have cooked this many times. Very easy and very tasty. If cooking for one you can reheat and add the fresh eggs when you reheat it. Yummy

I am 10 years old and I made this for my family of 4 ... It was a big hit and everyone had clear plates, and full bellies. I added chilli and chickpeas instead of the cannelloni beans, and used 3 aubergines instead of 2, it made it REALLY good. Really easy to make - great instructions.
