- 1 Brush the outer edges of the biscuits with a little dulce de leche, then roll them in the coconut.
- 2 Put 1 heaped tsp dulce de leche on half of the biscuits, top with 1 generous tbsp vanilla ice cream, then sandwich together with the remaining biscuits.
- 3 Dust with icing sugar, and serve with extra dulce de leche.
