Green pesto bows with magic avocado power

This is a great way of getting the good fats in avocado into children who might not be too keen on the texture when it’s chopped up. Blitzing it with pesto disguises it as a silky green sauce. Keep this simple or stir in flaked, cooked fish, chopped ham or bacon, shredded, roast chicken or chopped cherry tomatoes, just before serving.

Preparation

Stone and roughly chop the avocados. Finely grate the mature Cheddar.

  1. 1 Cook the pasta in plenty of boiling water, according to the pack instructions.
  2. 2 Meanwhile, put the avocado in a mini food processor – or use a handheld blender – with the pesto and lemon juice and blitz until completely smooth. If you do not have a food processor, mash the avocado with the pesto and lemon juice.
  3. 3 Drain the pasta in a colander, but save 3 tablespoons of the cooking water. Tip the drained pasta back into the bowl with the reserved cooking water and avocado mixture. Stir well to coat the pasta and serve in bowls, sprinkled with the cheese.

    This is really simple to make and is very nice, I added a little bit of black pepper and fresh thyme so I didn't taste so bland. Anyone who doesn't have much time this recipe is definitely for you, a meal in under 15 (INCLUDING PREP TIME). Win win

    Really tasty - put some lettuce in bottom of dish, put the pasta on top, then the avocado and pesto sauce. Added tomato, cucumber and small amount of cheese
