Halve the Cornish new potatoes. Slice the spring onions. Chop the fresh chive.
- 1 Cook the potatoes in boiling salted water for 10-15 minutes, until tender.
- 2 Meanwhile, in a large bowl, whisk together the oil, lemon zest and juice, mustard, salt and pepper.
- 3 Drain the potatoes and tip them into the bowl. Mix well and leave until just warm.
- 4 Stir in the spring onions and chives, and serve.
